Zakaat

When a husband and wife are equal partners in a business, but their zakaat date is different (eg. Husbands zakaat anniversary is 1st Ramadhaan and hers is on 15th Shawaal) must stock take, be done on both days and half of that amount be given for zakaat on those respective days?

Yes. If actual repeat of stock-taking is difficult, then a generous and safe estimate would suffice.
